Since everyone around is coughing and sneezing I’ve decided to load myself with vitamins:-) How to do that without taking a hand full of pills? Fruits. Especially those rich in vitamin C like pineapple, kiwi, and oranges. The best is served on a gluten free pancake with a sugar-free homemade Nutella:-)
For the pancakes:
- 8 tbs of chickpeas flour
- 100 gr of yogurt
- 4 eggs
- 1 tsp of baking powder
- a little bit of water
- coconut oil to fry pancakes on
For homemade Nutella:
- 1/2 cup of dates
- 1 avocado
- 4 tbs of cocoa powder
- 1 handful of hazelnuts
Mix all the ingredients for pancakes well. Add the water at the end to make the pancake batter half liquid. Fry the pancakes on coconut oil.
Pour hot water on dates and soak them for 1 hour (best would be overnight). Squeeze the water out and blend with avocado until you obtain a paste. Add cocoa powder and smashed or blended hazelnuts (I did it in a coffee grinder). Mix well.
I served my pancake with 2 tbs of cottage cheese, 1 tbsp of home made Nutella, 100 gr of pineapple, 1 kiwi and 1 Sicilian orange (my favourite cause of rich red colour). Bon Appetit!
