Moist banana, pecan & berries muffins- gluten and sugar free recipe

Do you crave for something sweet & healthy in the same time for Sunday’s coffee? If you like banana bread🍌🐒  or muffins with berries here comes recipe for you!

Ingredients:
  • 2 eggs
  • 3 ripe bananas (2,5 for the batter and 0,5 for topping)
  • 70g of oatmeal flour
  • 70g of rice flour
  • 10g of coconut shreds (optional)
  • 4 cubes of dark chocolate min 75% of cocoa
  • 20g of agave syrup (or other sweetener)
  • 30g of protein whey (I used ISO Whey Zero from BioTech vanilla flavor) – you can replace by xsylitol or other sweetener
  • 100ml of milk (I used almond milk)
  • 1 flat tsp of baking powder
  • 100g of berries
  • 2 tsp of cinnamon
  • handful of pecan nuts

Preheat the oven to 160 degrees C (320F). Blend bananas with eggs, flour, whey, baking powder, coconut shreds, milk, agave syrup and 1 tsp on cinnamon. Stir well. Cut chocolate into small cubes. Add berries, 3/4 of chocolate and shredded pecan nuts. Stir again. Grease muffins molds with coconut oil pour the batter in it. Cut the remaining banana into slices and decorate the cake with it and remaining chocolate. Bake for about 25 min until dry stick. Cool down. Dust the muffins with remaining cinnamon. Bon appetit!

The batter was enough for 8 muffins. 1 muffin= 182 kcal
