Gingerbread Cookies Recipe


  • 150g unsalted butter
  • 750g all purposes flour
  • 3 eggs
  • 1tbs baking soda
  • 350g white sugar
  • 3 tbs honey
  • 50g cinnamon powder
  • 1 teaspoon ginger powder
  • 1 teaspoon cloves powder
  • 1 teaspoon cardamom powder
  • Zest of one orange
  • 1 teaspoon nutmeg powder                                   


  1. In a pot melt the butter together with all the spices, sugar and honey (sugar could be partially dissolved). Cool down.
  2. In a large bowl mix together flour and baking soda. Add eggs and the mixture from the pot. Mix all together.
  3. Knee the dough until smooth.
  4. Preheat the oven to 170C. Line two baking trays with baking paper.
  5. Roll the dough out to a 0.4cm thickness on a lightly floured surface. Using cutters, cut out the gingerbread shapes and place on the baking tray, leaving a gap between them.
  6. Bake for 8-14 minutes (depending on its size- bigger cookies need longer baking time) until golden-brown. Move to a wire rack to cool down. When cooled decorate with the writing icing and cake decorations. Store in a closed boxes for 2 weeks or in an open box for 2 days to soften.
