Last minute gingerbread

Traditional gingerbread should be prepared few days in advance to have time to soften. What to do when its one day to Christmas and your gingerbread is not yet ready? Here comes recipe for last minute gingerbread.


  • 3 eggs
  • 1/2 cup of sugar (or 1/2 cup of dates soaked in hot water for 30min and blended) 
  • 2 tbs of honey
  • 1/4 cup of oil
  • 1 & 1/2 cup of flour (I used spelt whole wheat flour)
  • 2 tbs of gingerbread spice (ready made or mixed: ginger, cinnamon, cardamon, clementine zest, cloves, nutmeg)
  • 1/2 ts of baking powder
  • 1/2 ts of baking soda
  • 1 cup of shredded carrot (1 big carrot or 2 small)
  • 1/3 cup of chopped walnuts
  • 1/3 cup of chopped raisins or dried plums
  • 1 tbs of blackcurrant jam (optional)

Ingredients for  frosting:

  • 60g of dark chocolate 70% of cocoa
  • 1 tbs of butter
  • 2 tbs of honey


  1. Mix flour with soda, baking powder and ginger bread spice. 
  2. Mix eggs with sugar, honey, oil and jam.When they are well mixed slowly add dry ingredients (from point 1).
  3. Add carrot, nuts and dry fruits to the batter. If the batter is very thick add some orange/ clementine juice.
  4. Cover baking mold with baking parchment (I used 20x10cm)
  5. Pour the batter into baking mold and bake in 180 C for about 1 hour ( till dry toothpick) . Cool down.
  6. Melt chocolate & butter with honey in the pot and pour on the cake.
