Chocolate strawberry cake that will amaze your guests

  • 2 eggs
  • 180 ml of milk (I used almond milk)
  • 60g of coconut flour ( it can be replaced by rice or millet flour)
  • 1 tsp of baking powder
  • 10g of cocoa powder
  • 60g + 2-3 cubes (for decoration)  of chocolate 75% of cocoa minimum
  • 50g + 0,5 tsp (for decoration) of coconut oil
  • 60g of xylitol of other sweetener
  • 230g of strawberries ( I used frozen)
  • 250g of coconut milk
  • 35g of strawberry protein powder (you can skip and add more sweetener if needed)
  • 30g of gelatine
  • 120 ml of hot water (but not boiling)


Preheat the oven to 180 degrees C (356 F). Divide yolks and egg whites. Add milk to the yolks and stir well. Melt chocolate and coconut oil, cool down a little and then slowly pour on the batter (we don't want eggs to scramble:-). Add flour, cocoa and baking powder. Whisk egg whites with half of the xylitol and add them slowly to the batter. Grease baking mould (I used 21 cm diameter) and pour the batter in it. Bake for 20-25 min until toothpick is almost dry. Cool down.

Blend strawberries with coconut milk. Add remaining xylitol and protein powder and continue blending until dissolved. Add hot water to gelatine and stir well. Pour gelatine on the strawberries. Mix well. Pour it on the cake. Refrigerate for at least 3 hour (the best would be to keep it all night). Before serving decorate with some dark chocolate melted with  coconut oil and fruits. I divided the cake 12 portions. 1 portion = 277 kcal
