Do you always worry what to eat tomorrow on breakfast? Yeah, maybe with a cup of black coffee ☺. Well, I want to share with you my this week breakfast , a delicious piece of art. Coconut oatmeal bar.
- 300 g oatmeal
- 150 g coconut flour
- 40 g nuts (my favourite is cashew)
- 40 g dry fruits (I used dry cherries)
- 40 g dry dates (without seeds)
- 2 table spoons of nutella
- 4 eggs
- 2 table spoons coconut milk
Start mixing the oatmeal with coconut flour , nuts and dry fruits.
Add the eggs with coconut milk and nutella.
Cut the dry dates into small pieces and add it to the mixture.
Make sure all the components and well mixed together. Now you can start to feel the smell of coconut 🙂
I use the long pan for loaf bread , I like the shape.
Add butter to the pan in order not to be sticky
Add the mixture to the pan and gently apply pressure till the cake is well pressed.
Put the pan in oven 150c (302F) for 25 minutes.
Once done, leave the cake to rest. ENJOY☺!
