You follow a reduction diet? Try this carrot orange cake. It has only 140 kcal in a portion and it is gluten and sugar free.
- 2 medium size oranges
- 200ml of orange juice (orange juice freshly squeezed)
- 40g of agave syrup (or other sweetener)
- 80g of oatmeal flour (or rice flour)
- 2 eggs
- 200gr (1 & 1/2 cup) of carrot shredded
- 2 tbsp of coconut oil
- carrot juice (or water)
In a large pan reduce orange juice with 20g of agave syrup. Cut oranges into slices and remove the skin (together with the white part otherwise it will be sour). Add the oranges into the pan and boil under cover for about 10 min turning them from time to time. Cover bottom of the baking mold with baking parchment (only the bottom) and cover it with the oranges and reduced juice.
Preheat the oven to 180 degrees C (356F). Whisk egg whites and add slowly yolks while still whisking. Add the rest of ingredients (rest of agave syrup , flour, carrots and melted coconut oil). Add carrot juice (or water) until the batter have consistency of a yogurt. Pour the batter on the oranges. Bake for 35 min (until dry tooth pick). Cool down. Cover baking mold with a plate and reverse. Remove the cake from the mold and remove baking parchment.
I divided cake into 8 portions. 1 portion= 140 kcal
