Fit lemon cake from white beans for reduction diet

You are searching for something sweet, fit, healthy, sugar & gluten free and easy to make? You have just found what you need! I discovered this recipe during Easter preparations but it will be a frequently made in the future. I am already planning to get beans again:-) Oh and trust me, it does not taste beans at all. I tested on several members of my family:-)

  • 2 cans of white beans (440g)
  • 6 eggs
  • 100g corn flour
  • 100g rice flour
  • 50g coconut flour
  • 100g xylitol (or other sweetener) + 2 tbs for glaze
  • 100ml almond milk
  • 2 ts baking powder
  • 2 tbs of coconut oil
  • zest and juice from 1 lemon + 1 tbs of lemon juice for glaze

Grease the baking mold with coconut oil and sprinkle it generously with oat meal (or other) flour (you can use a different shape of baking mold of course). Preheat the oven to 180 degrees C. Wash well beans under water and than blend with eggs until beans are shredded into little parts. Add all other ingredients and mix well. Pour the batter into the mold and immediately place the mold in the oven. Bake for 60 min until you will have a dry toothpick.

Combine xylitol powder and lemon juice for glaze and pour on the cooled down cake. Bon Appetit!

I divided my cake into 20 portions. 1 portion= 133kcal

Carbs- 16,9g     Fats- 5,7g    Protein- 4,7g
